How am I ever going to lose this weight when I keep finding these really cool food blogs? My latest food blog obsessions are Fujimoto.com . I love Karolyn’s style of writing, I love the stories she shares and I love the recipes. I made Pear Delight last night and it’s what I had for breakfast! It was yum! It was simple to make, not too sweet and really a great recipe I’m sure we’ll make many times.

Another food blog I’m really enjoying is Plain Chicken. I saw the pic on pinterest of something she calls “Crack Bread”. I dare you to look at the pic and not be intrigued. We’re going to make this for Super Bowl Sunday. Mamacita may have to make one for work. We also made the recipe for Homemade Enchilada Sauce and it came out perfect. We’ll probably never buy canned sauce again. It was so easy to make and the taste can not be beat.

So I had a hard time getting the 52 Week Organized Home Challenge done this week. This weeks goal is to organize your panty, spices and food storage areas. I had done some of this challenge last week but I had several other areas I needed to get to. I didn’t start really until Saturday. I wasn’t feeling great all week and I was busy with some test knitting. So Saturday I first remembered to take a before picture.

It’s maybe hard to see in these pictures but let me tell you we threw away lots and lots of stuff. Anything that was out of date and it was sad how much of it was. We (Mamacita and I) talked about how we keep buying certain things over and over when we probably don’t need it. So no more. It made me think about how fortunate we are to have our cupboards overflowing and that there are people, even in the USA, who are hungry. It’s a shame really.

Maybe it’s because we are big cooks, but I didn’t get this task totally done because we have not just one little pantry, we have a spice/baking cupboard, these two built ins I showed you, another built in pantry in the laundry room and a 4 shelf open pantry and I just could not get it all done in 2 days. But I will continue doing what I can today and in the coming weeks. So I’d like to say maybe I get an A for effort of what I did complete.

I can show you the test knit sock pattern I was working on now because the designer, Mommyneedsyarn‘s Erin Walsh published the pattern. The pattern name is No More Tears. As stated before the proceeds of her sales will go toward Austism Speaks and I think that’s a great thing she is doing.

I am also doing something from my Plurk friend’s blog, Forever Yoga. It’s called 40 Days of Gratitude. I’m doing it because, although hard to do sometimes, I like to try to look for the positive in all things and as she states, if you concentrate on what is lacking in your life, you find more lacking. I want to focus on what I have and watch it grow. I have been posting one of my entries for the day to Plurk and I’m also keeping a gratitude journal. Today I wrote that I’m grateful to know how to cook. I can create almost anything and I really enjoy it.
